If Android is open what's the deal with rooting your phone? Can someone explain what this means and why one would need to do this?

to be honest, rooting isn't the big thing that makes android. It does give you access to things like tethering and such.

it's that the phones (eg: droidX) have encrypted bootloaders which prevents the installation of custom firmware.

Rooting is similar to jailbreaking. You can do things like free wireless tethering or modifying system files, just like on iOS

There are a couple of things you can do without rooting though, like installing apps not from the Market (ie, AppStore).
