Does anyone know how to get messages sent from Mac Mail to use the 'Sent Mail' folder on gmail instead of creating it's own 'Sent Messages'?

found it, I think. Select the sent messages folder in left bar, click 'mailboxes' (top nav) > use folder as > Sent Mail

Did you figure it out? If you can see the gmail folder then is probably isn't hard. Done other folders before myself.
