unless someone else gives you a better answer, shoot Av in RAW, expose around 1 stop under, cover your eyepiece.

center-weighted average metering mode. Then in post CC in Adobe Camera RAW and assemble TIFF sequence in AE.

there's a plugin for AE that helps to smooth out variances in exposure, I'll find the name for you. Works pretty well.
