sure you could configure Alfred to do that for you with a custom hotkey (e.g. launch sublime, will focus if already open).

yup. In the main keyboard shortcuts pane in sys preferences. You can configure anything that has a menu in there.

however these issues can be overcome by tuning your stack related to your application type.

a variety of reasons. Ruby 1.8.X used to be quite bad with memory, 1.9.3 addresses a lot of issues, also, a lot of Rails (1/2)

the main flaw is that they failed to find a way to monetize it to the masses. Not many people see enough value to pay for it.
